The Gluten-Free Winner-here's why Jul 26, 2010 Here are some tips for gluten-free breadmaking with this machine:
This machine has two kneading stirrers, while most machines have only one. It also has a bigger, stronger motor than many machines, to handle its two-pound loaf capacity. For gluten-free breads, both of these features are important, because gluten-free dough tends to be thicker and heavier than wheat dough.
With many gluten-free recipes, you need to slowly fold in the flour mix or scrape dry ingredients off the sides of the pan when the kneading cycle begins. This machine has a horizontal pan, which bakes a horizontal loaf (like you buy in the store). Many smaller machines bake a vertical loaf in a vertical pan, which is harder to work on because of the narrower pan and its depth.
This machine does not have a gluten-free cycle. However, in our experience, this cycle is unnecessary. The better gluten free bread books will tell you exactly how to make the recipe work without a gluten free cycle.
We had no breadmaking experience before purchasing this machine. In doing our research, we learned that gluten-free bread recipes were somewhat more sensitive in terms of the precise ingredients and instructions than wheat recipes. This machine's programmability and flexibility make it easy to follow the exact recipe.
I strongly recommend purchasing a gluten-free bread book with this machine. We have three:
Gluten-Free Baking Classics for the Bread Machine: a short book that uses a single flour mix, with specific instructions for this Zojirushi machine.
125 Best Gluten-Free Bread Machine Recipes: the most in-depth book, with detailed instructions for cycles, temperatures, etc. If it was written for a single machine like the book above, it would be much simpler. However, the recipes are great (the bread sticks are amazing).
The Gluten-Free Gourmet Bakes Bread: More Than 200 Wheat-Free Recipes: contains instructions that will work with any machine.
It takes some practice to bake good gluten-free bread, but the results are worthwhile. This machine is the best path to success. Enjoy!
Zojirushi bread machine Jul 23, 2010 I love this machine. I feel sorry for the people out there that did not have a good experience with this product, but I would recommend it in a blink. As some people complained, at the medium/light crust setting, the Zo would not bake the top as brown as I hoped, but I just set it on dark crust and the bread came out perfectly. We really need to try the different settings and kind of play with the ingredients for a few times in order to get our own "perfect bread". It's just I very good bread machine! I hope it will last for a long time... I used for a few times an Oster bread machine, from a friend, with good results, but it came time for me to get my own one. I researched and researched and I got this Zojirushi one... I am very impressed! After a few trials (that were all good breads) I got the gist of it and made my own adjustments using the Home Made feature (the 3 Memory settings). Great bread all the time.
Review of Zojirushi Bread Machine Jul 22, 2010 This is my first bread machine. I need to make a lot of bread because I must eat gluten free. I am very pleased with this machine. It is easy to use for simple bread, but also has all the settings making it easy to bake gluten free bread.
Great Machine But Cut The Flour Jul 19, 2010 The first couple of times we tried this machine, the loaves came out super dense. Our previous machine was a West Bend which was great. Then, when that broke down we bought a single paddle Oster- bad idea.
So we splurged and bought the Zojirushi and it worked great but the loaves all came out like bricks- waaay too dense. Finally we went back to the recipes from our old West Bend- success! The loaves are light and large and a real pleasure to eat. The big trick? Use one less cup of flour!
