Good for the Soul! May 30, 2011
By Polly Mikael Yes yes yes!!!! The recipes here that ANYBODY can prepare are not just simple but they are healthy and still offer an amazing assortment of country-style cookin'!
I have no doubt that the author was raised in the back country as I was when I was a girl. (My family did not move to a "town" until my twin sister and I were 14!) We were farmers, had pigs and goats and cows and all that, and my Mom cooked much of this same food and although this is healthier than Mom's, all the flavors of what I've made so far are just as good OR BETTER than Mom's and that's saying a lot. Plus, the memories, I swear, as I eat some of these dishes I recall actual conversations my family had when we ate this same food when I was small. Oh, and if you don't know what to make first, let me make it simple for you: Start with Mama's Sweet Potatoe Pie and while that is setting up, prepare the Down-Home Barbecued Chicken. There IS NO BETTER COMBO in any recipe book on the planet!!!

By LC Wincher Don't even worry, just pick a recipe or two that sounds good from The Low-Calorie Soulful Country Cookbook, whip up a batch, and serve it to your family! You get soulful food, healthy food, AND COMFORT food and anyone who wants seconds gets them! The very first thing I made was Yummy Candied Yams and the Oven-Fried Chicken. Come on, what is better than that combo??? The bonus is that Maggie Nola (the author and cook extraordinaire!) explains throughout extras, such as the Yummy Candied Yams being a high energy dish. Also, she has all the data, the number of people served, and the recipes are STEP-BY-STEP and I found them NEVER REDUNDANT OR CONFUSING and I am not the best cook in the world. My family loved dinner last night and I had to come and write this for others to see. Highly recommended!!!
