Cypriot cuisine is shaped by the island's Mediterranean climate, geography, and history. The majority of its recipes are based on Greek cuisine and the Mediterranean Diet, which is one of the healthiest in the world, using fresh, wholesome ingredients. Cyprus’s strategic location in the Eastern Mediterranean, situated between the crossroads of three continents, had brought to the island many conquerors and thus its cuisine has evolved into an amalgamation of diverse tastes and textures, with an unmistakable mark that makes it undeniably Cypriot. You will see influences from the Ottomans and its neighbouring Middle Eastern countries but there are also remnants of French, Italian, and Anglo-Saxon influences stemming from the island's occupation by the French Lusignans, the Venetians, the Ottomans and the British. The cookbook is a collection of over 150 of the best traditional Greek-Cypriot recipes, fully revised and updated with a fresh, modern new look, a brief history of the recipe, clear instructions, useful tips and over 160 mouthwatering pictures. The recipes are written both in the U.S. and the metric system and substitutes are given for local ingredients. Cypriots are Orthodox and almost half of the year is fasting period, so a lot of the recipes are nistisima (vegan). Mediterranean food is delicious, easy, inexpensive and, of course, healthy. In the cookbook you will find a lot of recipes, which reflect on the simplicity of the Mediterranean style of eating, ranging from the classic makaronia tou fourniou (pastitsio) and moussakas, sheftalia, ravioles, koupepia, bourekia, flaounes, kolokotes, daktyla, loukoumia (delights), mahalepi, to more complicated recipes such as bombari, zalatina, pastitsia (almond cookies), shiamishi, loukoumia tou gamou and more. The author has included a small sample of her own recipes, always based on the traditional principles of the Mediterranean diet, such as louvanosalata, a dip with yellow split peas, galeos marinatos (marinated tope fish), moussakas and pastitsio nistimo (vegan), sykotakia me lahanika (chicken giblets with vegetables), caramelized spiced dry fruit in wine. I thought the cover looked very attractive and interesting. As soon as I saw it I had a huge appetite to start cooking.

I have been a fan of Ivy's blog for a few years and whatever I cooked from her blog was a great success, so I did not hesitate a moment to buy her cookbook. Ivy is Cypriot of origin so she knows Cypriot cuisine better than anyone else as she has been cooking Cypriot food since she was a child as she tells us in her book.

Each recipe is preceded by a beautiful color photograph of the prepared dish. In some recipes, I've seen some step by step photos as well. What a great thing for a cookbook to have!

The recipes are very well written and the directions are easy to follow, best of all the ingredients are readily available from any grocery store and she gives them both in the U.S. and metric system. For a few Cypriot products used, Ivy makes sure to give some substitutes.

I have the book in my hands for only a week and have cooked a few recipes over the holidays. A huge success with my family who were very satisfied with the outcome.

I would highly recommend this book to anyone who loves Cypriot Cuisine, which is a blend of healthy Greek food but where you will also see the influences of other cultures as well, especially Middle Eastern.

A perfect gift for newlyweds and anyone interested in cooking up full bodied wholesome meals!

I was looking for a book with Greek recipes to gift to my wife. I found this book by chance, it looked good and I decided to buy it. It was amazing. It has so many greek (and cypriot) recipes and what my wife tried to cook so far were delicious. She also told me that the cooking instructions were easy to follow. I've read from other reviews that the author has a blog, which I am very curious to discover.

I highly recomend this book to anyone interested in delicious food!

Ivy did a lovely job of creating this self published cookbook and has kindly offered to help me out with mine. Lots of photos and if you want to know about traditional Greek cuisine, then you will want this book. Meat eaters and vegetarians and vegans won't be lacking for inspiration in the kitchen. Lots of helpful tips and advice from one of my favorite home cooks. Thanks Ivy for your efforts.

What a tasty selection of Cyprus!!! I bought my mum one & just had to buy one for myself too.
Ivy explains everything so thoroughly you never feel lost or think it will be too hard to make any of these dishes.Cypriot cuisine has a new life in my Sydney kitchen again. All in one book!! Wonderful & Thankyou Ivy :)

For anyone wanting to learn about Cypriot cuisine, this is your bible! When I read on Ivy's website, Kopiaste.org, that she had released her cookbook, I didn't expect 230 recipes in the form of two fabulous volumes. Filled with clear explanations and background history to the mouthwatering recipes, each volume is beautifully illustrated. I love how she includes different versions of classic recipes: such as her Mum's beetroot salad, a beetroot salad using the leaves plus her own take on the classic. Suddenly my tourist recipe book I bought many years ago in Cyprus has been pushed aside on the cookbook shelf; the master of Cypriot cuisine has arrived!
