When Susan first moved to France, I read her book,On Rue Tatin. Wonderfull,Funny and Surprises abounded. I desperately wanted to make and bake a true Geniose{cake}. However, creme fraiche was not avaiable@the Time in Our Area.So, I e~mailed her and stunned Susan responded with a way to prepare True Genoise.A delightfull,gentle Soul, that still writes and raises a Family still in the more Rural Areas of France. Love the book for a Festive Season of Myriad Cuisine. Showing the Best of what France Has to Offer. Plus not as thick as Complete Book{s} of French Cooking by Madames, Child, Bertolle and Beck.
