By Bargain shopper At first glance the size and style of this book looks like many other "theme" cookbooks out there that try to pick up on a trend and fill it with basic junk recipes. DO NOT LET LOOKS FOOL YOU! This cookbook should be a glamorous giant hardcover book the publisher would charge $35-40 for, the research, recipes, and photos are just wonderful!.. but I am very glad it was produced small, compact, and less expensive. I have an extensive 80+ cookbook collection, and I know this wont even end up filed on my bookcase. I will use it too much to put it away! I almost wonder if the simpler production is a reflection of the economy/recession... if so, kudos! Making a quality product more affordable is a great call, and will allow more people to purchase and enjoy it.
Definitely try the tacos with nopales... nopales are very good. I look forward to trying the fried avocado taco, it sounds yummy with both the steak or shrimp suggested. Not everything is so "unusual".. there are recipes for many different tastes, and as said by the other reviewer, these are not difficult recipes. With fresh masa tortillas even the most simple cheese quesadilla is fantastic. I will also try some of the recipes but as salads or lettuce wraps instead of tacos, and some combinations would be good alongside mashed potatoes for a hearty winter dish.
The other thing I like is the ingredients are not expensive. As grocery prices go up, I can't afford to cook all the "fancy" stuff I used to, and most of my chef-authored cookbooks are going unused. With the affordably priced book, mostly inexpensive ingredients, easy and approachable recipes, this chef author has really hit a home-run for the modern home cook! This book is not chef-pretentious, but with the perfect flavor pairings, it was instantly obvious to me that this was written by someone who really knows their craft.
I am a photographer (mostly sports, but fashion and food too).. my colleague is a food writer...in the office surrounded by stacks and stacks of glossy new cookbooks for review, THIS was the one both of us were salivating over. I instantly wrote down the title so I could purchase, since I knew there was no way I was getting the review copy away from my colleague. We see A LOT of books. Somewhat jaded, it takes A LOT for a cookbook to stand out to us like this one. The one other book that really stood out to both of us was "High Flavor, Low Labor: Reinventing Weeknight Cooking", by J. M. Hirsh (disclaimer-I do not write the reviews and have absolutely no affiliation or contact with any publishers in any way. This review is purely my own opinion as someone who likes to eat good food.)
This is a sure bet cookbook....without a doubt.

This cookbook takes you straight into the kitchen of some of the BEST chef's of Mexico.. and then.. proceeds to teach you how to cook EXACTLY like they do south of the border! 'Just tacos' is fully illustrated with colorful photos that teach you exactly how to fix an authentic Mexican meal! No Tex-Mex in this one.
The history that is also included was very insightful and well-researched! It was an absolute delight to read!
'Just tacos' is going to rapidly become a must have cookbook in any kitchen! Might even want to order two.. as this one.. will surely be used a great deal! What a wonderful gift item!! It will hit the shelves just in time for Christmas or rather Feliz Navidad! Such a large variety of tacos, fruits, meats and meal ideas!
You'll learn how to use hibiscus water to make pink taco shells! Fry an avocado! Prepare prickly pear cactus! Boil an octopus! So many different taco recipes too!! The list just goes on and on! Fascinating reading! A book for those who love to prepare authentic Mexican dishes!

Just Tacos by Shelley Wiseman is a wonderful addition to my cook book collection. This book delves into all things tacos. From the minute you open the cover, you can't wait to rush off to the grocery to stock up on supplies. Every recipe in this book can be mastered within one or two attempts. Don't let this ease fool you. The recipes are so well researched, planned and written that you will be proud to call the end results your very own masterpieces at your next taco party.
Looking forward to preparing several dinners and many parties with this collection of recipes for years to come!

Wonderful book that I'm recommending to friends. Oct 27, 2011
By Shala Kerrigan Just Tacos : 100 Different Recipes for Breakfast, Lunch and Dinner describes the theme of this cookbook perfectly. Just tacos, but tacos made with ingredients that range from the expected like pulled pork to very unexpected ingredients like tuna with a wasabi mayonaise or fried avocado tacos.
The book starts with recipes for several kinds of tortillas since that's the part that holds a taco together. The recipes are mostly for corn tortillas made with masa harina. There is also one recipe for from scratch corn tortillas that you make the flour for, and 2 recipes for regular flour tortillas.
Then you get into the recipes. My family love tacos, and after my first leafing through the recipes, before I picked a couple try, I called a friend who really, really loves tacos and loves to cook and told him he needed this book.
There are several points in the book where the author goes into a bit more detail about a technique or an ingredient. All of them are chatty and informative. Each of the recipes has a serving suggestion listed for extras to serve on the side.
There is so much variation here. Literally a taco for any time of the day, any sort of mood. Vegetable (including several recipes that are vegan friendly), seafood, poultry, pork, meat (which mostly means beef but also includes lamb and sweetbreads), breakfast tacos and the final chapter which is Quesadillas, Sopes and Tostadas.
So many different flavor combinations, this is a keeper. I let my daughter pick the recipe she wanted to try and she picked the "Drunken Chile Con Carne" tacos. This is made with ingredients you'd expect like chiles and inexpensive steak, but also includes bittersweet chocolate and beer. My husband was extremely dubious of any recipe that called for beef and chocolate. Since the chile takes two hours to simmer though, he had lots of time to rethink that. The whole house smelled deliciously of the peppers and meat she used. The timer went off and he said "FINALLY!" then she went back into the kitchen to restart the timer (my timer only goes for an hour). When it was finally served, his reservations were gone. It tasted fantastic. She was able to follow the instructions easily.
I'm happy about the chorizo recipe. It's easy enough to make ahead and keep in the freezer to mix into all sorts of tacos without having the somewhat scary ingredients of the chorizo at my local grocery store. It tastes fantastic.
The table of contents is just that, it shows the chapters, not the recipes in the book. The index at the back is by type of taco and ingredient. So to find the recipe above, you wouldn't look under D for Drunken but under M for Meat. There are also a few beverage recipes in the book as well.
Very recommended for serious taco lovers.
