Description:

Emile Henry Flame Top cookware, a technological innovation. An innovation in ceramics technology, Emile Henry's new line of Burgundy Clay Flame-Top ceramics products work directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking. Much lighter, (30%), than many types of comparable metal cookware products, Flame-Top is microwave and dishwasher-safe, cleans up very easily, is extremely strong and durable, goes under the broiler, and can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time. This recent innovation from Emile Henry is a break-through in ceramics technology. Unlike most metal cookware products, Flame-Top cookware can sit on a very hot open flame for an extended period of time without any ingredients in the cook pot, and they will not crack, discolor or break. Perfect for braising, browning and slow cooking due to the incredibly gentle heat distribution properties of Burgundy Clay, Flame-Top products cook evenly and thoroughly when used on top of the stove, in the oven or even in the microwave. Enhancing this gentle cooking action are raised dots on the underneath side of each lid that evenly distribute evaporated juices directly back into the cooking food. This self-basting technique produces a more thoroughly cooked, tender and moist dish than with traditional lids, which force liquids to run down the sides of the pot, and which contribute to uneven cooking. Emile Henry Flame-Top ceramic cookware is light and versatile, and better brings out the flavors of all cooked foods.

Features:
  • Made of Burgundy clay, can be used directly on a gas flame or an electric or halogen hob without a diffuser, without any fear of cracking or breaking.

  • Oven, broiler, microwave safe, it can go directly from a freezer or a refrigerator to a hot oven to the table, where it will retain the cooking heat for a very long time.

5Better Than The Traditional  Jun 10, 2007
By NuJoi "Create with me"
I love tagine cooking. I purchased a traditonal clay one years ago. You had to soak it overnight in cold water before use. I hadn't used in in over a year and I knew I was taking a chance when I didn't bother to soak it. I even smiled as I watched the crack form and spread. At last I had an excuse to purchase this one!

Dishwasher safe! No soaking, although you do need to boil milk in it before the first use. This size feeds six. I lucked out and found a black one at Crate and Barrel Outlet.

Although I was annoyed with the upkeep of a tradtional tagine, I didn't want to switch to stainless steel or cast iron. This new glazed clay is a wonderful innovation.

This one cooks evenly. Cleans up easily and is nice enough to serve from at the table. If you are serious about the cuisine, this is the one to purchase. I'm concerned about the cast iron and stainless steel ones by other companies. Those aren't traditional materials and they conduct heat much more effeciently. The food may cook too quickly. This is as close to the original as you can get without the prep and cleanup hassles that come with it.

5Moroccan cooking  Mar 24, 2007
By K. Skakri "Moroccan by marriage"
I am very pleased overall w/ this product. My husband is Moroccan and we cook tagines probably 5 times a week. We had been previously using a very small clay tagine from Morocco and needed a larger size. We have cooked a wide array of foods in this tagine and are very happy w/ all the results. Not to mention, it also looks wonderful displayed on our range top when not in use. The heat is evenly distributed and the steam is circulated well in the conical lid. The one thing I would do to enhance this product is to create a small hole for venting. For now, we prop it open on occasion w/ a wooden spoon. We have requested the smaller (9.5") tagine for a gift.

5Great Cooking Experience  Mar 20, 2007
By JPK
Wow, 90 bucks for a pot seems kinda hefty but this sucker really is worth it. Packaging was good, came fast and I've used it 4 times already in the past two weeks. This is not only for cooking moroccan food but others as well. Meats prepared on stovetop for 2 - 2.5 hours are incredibly tender and juicy, based over and over again with the lid shape designed the way it is. So far did beef, chicken, pork and gonna do a turkey breast later this week and I cant wait. I love it and leave it on my counter top cause I love the way it looks too! Seems pretty solid, i forgot I left it in the oven and had it pre-heating at 425 for an hour. Seems to be quite sturdy too!

5Excellent Product !!!  Feb 14, 2008
By Mary Walker "Mary"
I can't praise the Emily Henry Co. for this product. The craftmanship is
superb and this isn't just another cheap over priced product. I've cooked tagines on the stovetop on medium at perfection. The design allows the flavors to recirculate and permeate the food. My chicken apricot sauce with pinenuts was perfect! I have also used it to brown steaks, then
slow cooked to tender. I think I've just found the perfect replacement for the slow cooker. It's really that wonderful.

5Well worth the cash !  Nov 17, 2007
By Cooking queen "love to cook"
Emile Henry Flame Top Tagine 12.5", Red I got a wonderful price on this item...74.95 plus free shipping! I couldn't decide if this was really what I wanted, hubby is sick of the kitchen gadgets I buy, no room left in the kitchen. But this was worth the investment by far. This is sturdy, but light weight stoneware I have ever seen. Cooks even, and moist, clean up NO problem, and it is a eye stunning piece. Eggs are wonderful in this, and meats fall off the bone. This was a great investment for my kitchen, and I recommend everyone try using this . The cooking is sooo flavorfull !
