I am not crazy about sandwich disk bottom pots & pans. I prefer multi-clad or tri-ply type of cookware. I needed a sauce pan but I have difficulty to find my favorite Spring Switzerland Brigade cookware in U.S. I found the Demeyere 3.2 qt pan has deep discount on Amazon, so I give the Demeyere a try.

Here are my non scientific comparisons: disk bottom vs. multi clad,
Demeyere3.2qt / 20cm vs. Spring Switzerland 4qt /20cm and All Clad 1qt/ 15cm

Boiling speed: Surprise! Demeyere is about 30 seconds faster.(did not test All Clad)
Heat retaining: All are great. Spring & All Clad retain longer.
Interior: Spring polish better and feel smoother. I can feel and see the circle lines inside the demeyere.
Exterior: All clad is shiny. Demeyere is matt finish.
Lid: All Clad's lid is not good.
Fry egg: All are great and non stick.
Simmer: Still learning how to control the heat on demeyere because it is new to me and the bottom.
Design: Personally, I think the Spring is more sophisticated and detail oriented. The demeyere looks like a tank. All Clad says itself. Besides the lid and pour rim, nothing much to complain.
Cleaning: The demeyere is a little bit harder. I must use few more drops of DAWN to kill the grease.

After some experiments, I do not see much diffidences of cooking abilities between Demeyere's disk bottom and multi clad one. Over all, I think my new Demeyere sauce pan is a great buy. It well built and heavy. I cannot nicely pour liquid because of the weight but I definitely will try the smaller sauce pan next time.

I've been using Demeyere cookware for a couple of years now, including this saucepan.

This particular saucepan is very solid and heavy in the bottom, built just like the Atlantis saute pans are - the bottom consists of a thick layering of metals and the sides are thinner stainless steel. It does what a straight saucepan is supposed to do - heats quickly and evenly from the bottom, stays hot, and cleans up just fine. The Atlantis handles are comfortable and stay cool. The lid fits tightly and is also of very good quality.

Because this saucepan is 3.2 quarts and has such a thick bottom, it can be a bit difficult to pour using one hand. (although it does have a nice flat 90 degree edge ideal for pouring) For this reason, I kind of wish it had a small helper handle on the back side for pouring and washing. However, I still think it's a fantastic pan and I would never change it for another. I plan to pick up a slightly smaller size at some point.

I also like and use the Atlantis conical sauce/saute pans as well, which are lighter weight and have a clad construction ideal for reductions. But they don't have the pouring edge or the tight lids.

It's hard to believe that my Demeyere pieces have already been used for years - they are all rock solid and doing just fine. No sign of loose welds, warps, dents or anything. I can see these lasting a lifetime, or two.

This pan is heavy. Very heavy. Heavy enough that a helper handle would be...err...helpful. That being said, I'm giving it five stars anyway. I love this pan. Everything in the Atlantis line is beautiful and this pan is no exception.

Beatiful finish, great heavy pan. It boils water almost as fast as my copper tin lined pan. The price was also incredible. Thanks, Amazon

I expected a 3.2 quart saucepan, but I got the double handled casserole instead. I actually like it better, it takes up less room in the drawer and nests beautifully with the 2.3 quart pot. Now my demeyere "collection" is complete at two pots and a controlled induction skillet. Works perfectly on the induction side of my Viking glass top range. I really like the induction cooking. Very quick to heat and no sticking on the cooktop, since the induction part of the top itself never gets "hot". The pot itself is a thing of beauty, almost an art piece, but it is heavy. The lid is well formed and fits perfectly. The cookware itself is not as heavy as cast iron cookware but it is substantial. Very high quality, but for the priced it should be! I would recommend this cookware to anyone who has an induction cooktop. UPDATE,
Still like the pan but I don't use it that much. If I had to do it over again I would not get this one, just because I like to use the radiant units for simmering, not the induction side. Just my preference, no real reason.
