The must is reduced down to a syrup in copper pots. When they reach the desired consistency the syrup is poured into wood barrels where it is aged. After a number of years each barrel is classified gold, silver, or red cap according to its quality. The vinegars are rotated through various types of wood barrels to give it its desired characteristics. This vinegar makes a truly wonderful gift.
