Beautiful dutch oven does the trick Jan 03, 2011
By RandyCal Well, I've been wanting a dutch oven for many years, and I finally got this one as a gift. It's huge (8.5 quarts) and substantial, but not so heavy that it's hard to manage when filled (a challenge you will find with the traditional cast-iron dutch oven, especially one of this size). The non-stick surface works great - just remember to follow the manufacturer's instructions and avoid using non-stick sprays, which can be hard to remove and possibly damaging. Instead, rub some vegetable oil around the surface with a paper towel. Works just fine.
So far I have made a moussaka in this pan (I didn't have a baking dish large enough for the recipe), which was a great success, and last night I made a french onion soup that was fantastic - my family couldn't stop raving about the flavor of the soup! The only challenge is that with a french onion soup you are looking for a "fond" to develop as the onions cook (for a deep, caramelized flavor), which isn't really that easy to do with a non-stick surface. Still it worked out, and clean-up took no time at all. I don't think this would fit in my dishwasher, but I don't generally put large pots in there anyway.
Unlike cast iron dutch ovens, this one features a glass lid, which made checking on my roasting onions much easier.
I would highly recommend this dutch oven if you want a pot that goes from stove to oven, will accommodate large quantities of food, and provides the ease of a non-stick surface.

Not only is this dutch oven nice-looking, it's another great quality product from Calphalon. It's much larger than my old dutch oven -- I can probably fit three pot roasts in it -- and of course has the nice see-through lid and excellent non-stick surface.

By BROOKLYN GAL I NEEDED A POT LARGER THAN 6 QUARTS SO I BOUGHT THIS. WHAT COUGHT MY EYE WAS THAT YOU COULD USE THIS ON STOVE STOP OR IN THE OVEN AND IS NON STICK.
I MADE CABBAGE ROLLS IN THIS POT. IT WAS EASY TO ROTATE THE ROLLS FOR EVEN COOKING. HELD A LOT OF SAUCE AND DID NOT SPILL OVER THE TOP.
MADE STUFFED FLANK STEAK BRIOGOLE WITH VEGETABLES. BRAISED VERY WELL IN THE OVEN. CAME OUT GREAT.
ALSO MADE CHICKEN SOUP. ALOT OF SPACE FOR ALL INGREDIENTS.
BEST OF ALL IT CLEANS SO EASILY!!!! LOVE IT!!

By Omar Farid Like it. I t would be nicer if they would lower the price a little. do yourself a favor- never use metal spoon or spatula (if you can, get rid of those).

I love Calphalon Contemporary nonstick cookware and the 8.5 quart Dutch oven is perfect for making chili, pots of hearty soup or cooking pasta for the extended family. A week doesn't go by that I don't get out this wonderful Dutch oven. I must admit that it rarely goes into my oven (it's used almost exclusively on the top of my stove).
