best smoked turkey Apr 23, 2011
By keanjr i used this brine to smoke a turkey at Thanksgiving 2010 and the 18lb. bird was nothing but bone in a matter of minutes. I had to apologize to my aunt. she took most of her turkey back home with her. this is a sweet brine. i use the wet recipe and use half the cure otherwise it is too salty. I brine for a minimum of 24 hours in a covered 5 gallon bucket. I just did a 17 lb. turkey the other day and i used two cups of cure and 2 gallons of water.
