Wonderful wok Jul 04, 2007

By K. Cruz you can tell it's good quality the moment you see it with your eyes... then the moment you hold it and learn that it's heavy and you are assured even more that you've made the right purchase.
I like the wok itself. only thing I find could be improved is the handle screw... it loosens.
And this is not the woks fault but it took me 3-4 times to season this wok using different methods.... that's acceptable since this is the first time i've done it.... we've done the salt method first which seemed the simplest to do (but hot and the salt pops!) but it didn't seem to give the "right" patina you should be looking for so we did the stove top method too.... Whoah the house was full and I mean full of smoke! we can't breath and you have to do it 3-4 times. We thought we did it right then so we started using the wok. after a few days I noticed some parts of the patina getting removed? and the color is in patches.... so I did my research and scrub it again to repeat seasoning from scratch and I've learned that the type of oil you use in stove top method is important and it takes time before you proceed in doing the next step....
now I love my wok with beautiful even patina! also this patina gives a nonstick coating that makes all those teflon coating useless for me now hehehhe...
again love this wok! and all the troubles i guess is worth it

By Rick We needed a flat bottom wok and didn't notice in the ad that this was round bottom (our fault). Never used it and gave it to our daughter who has not used it yet either, will follow up later with more on this item. Better instructions on proper "seasoning" of the wok would have been good too.
A carbon steel wok is the only way to get that "take out" taste. Mar 17, 2012

To achieve what the Chinese call "wok hei", you'll need a seasoned carbon steel wok and a high output burner. (chances are, your gas stove doesn't cut the mustard)
"Wok Hei" is that Chinese restaurant flavor that is difficult to replicate at home unless you have the right stuff.
I use this wok along with a 35,000 BTU propane burner. (outside, of course) The bottom of my wok is literally blue in color because of the intense heat. I can make Chow Fun, Lo Mein, and fried rice BETTER than the local take out places. (because I use less oil and higher quality meats/veggies)
I thought the helper handle would be a good idea, but it turns out it is not. The wood on the helper handle is getting charred from the heat of the high output burner. This is why it gets a four star rather than 5 star review. Learn from my mistake and order one without the helper handle.
You NEED a high powered burner for this to work. It has to have enough output to keep the bottom of the wok super hot so your food doesn't stick. On a regular range, you can heat the wok until it smokes, but once you throw in the food it'll cool down and your food may stick. To add insult to injury your dinner will be steamed and not stir fried. You know the wok is hot enough when liquids don't collect at the bottom because water from veggies and juices from meats are immediately boiled off as soon as it touches the super hot seasoned surface.
Also - never buy an electric or teflon coated wok. Electrics will never maintain the heat, and the teflon coating will release toxic fumes when heated to the temps required for "real" stir fry.

By Matthew J. Stine I've had this wok for two years now, and this thing is cooking just as well as the day I got it. Good construction, and makes great chinese food.
